The Perfect Profiteroles Recipe

I have a confession to make.  I have a sweet tooth and easily succumb to delicious treats made with milk, butter and most importantly sugar.  Given that, you can only imagine my sheer delight when Capella Singapore’s Pastry Chef Sam called me into his kitchen to share the new profiteroles recipe he is working on for The Knolls.

I was very grateful that Chef Sam took time out of his busy schedule to teach me.  According to Chef Sam, “I always believe to teach is to learn twice. By teaching I get to learn a second time, and also it gives me insights on ideas other people may have, which could eventually become part of my next idea for a new creation.”

Chef Sam’s profiteroles were indeed heavenly and they were surprisingly easy to make.  They were light with a slight bite and with a rich golden brown colour.  The profiteroles were sweet at first bite, but with a mild salty aftertaste perfectly complementing the chocolate sauce we made.

Profiteroles
Serves six

Ingredients:
50g Milk
50g Water
¼tsp Salt
1Tbsp Sugar
50g Butter
60g All Purpose Flour
2.5g Baking Powder
2 Eggs

Method:
1. Mix the milk, water, salt, sugar and butter into a saucepan.  Bring to boil allowing the butter to melt.
2. In a separate bowl, sift together the flour and baking powder.
3. Remove from heat and pour the flour into the boiling liquid and cook until a smooth dough forms and it pulls away easily from the sides of the pot.
4. Put the hot dough into a mixing bowl. Continue mixing while adding in 1 of the eggs to cool it down immediately.
5. Add in the second egg and continue mixing until the dough forms a smooth shiny consistency.
6. Pre-heat the oven to 200 degrees Celsius.
7. Pour the mixture into a piping bag and pipe onto a tray lined with baking paper.
8. Bake in oven for 15-20 minutes until dark golden in colour.
9. Remove from oven and once cooled on a baking rake, refrigerate in an airtight container for up to two days.
10. Once chilled, poke a hole into each profiterole and pipe in ice-cream and serve with chocolate sauce.

Chocolate Sauce
Makes 1 ½ cups sauce

Ingredients:
½C Water
⅓C Sugar
2Tbsp Corn Syrup
¼C Cocoa Powder
100g Dark Chocolate Chips

Method:
1. Bring water, sugar, corn syrup and cocoa powder to a boil in a small saucepan.
2. Remove from heat and quickly whisk in dark chocolate pieces.
3. Stir until smooth.
4. Strain through a fine mesh sieve.
5. Allow to cool slightly before serving.
6. Pour generously over profiteroles.

Capella’s Canon Card

If you’ve had a chance to visit the About Us page here on the Capella blog, then you may have read our Zeitgeist.  But did you know this is only one element of our Canon Card?

In addition to our Zeitgeist, the Canon Card also contains Capella Hotels & Resorts mission statement, service standards and the canon itself.  Not only does every employee have access to the card, but it is also something that is considered part of our uniform. That’s right, regardless of title every member of the Capella team is expected to carry a Canon Card.

The Card is exactly that, a card with eight faces that folds up to the size of a business card.  The Canon is our law.  It aligns each of us behind the philosophy that is Capella and is an integral part of our philosophy.  This system speaks to our integrity and our value systems.  It is so central that at every property and even here in the corporate offices, we begin every shift with a meeting where an element of the card is discussed.  This is an opportunity to be continually reminded of who we are and what is expected of us.

I love the practice of lineup as well as the card, because they are a reminder that we all share a common goal and a road map for how to achieve it.  I am just as connected to a dishwasher at Capella Singapore as I am to an executive assistant at Breidenbacher Hof, A Capella Hotel—even though I am based out of our corporate office in Atlanta, Georgia!  We all have ownership in making sure that the services we provide are unmatched.

I wanted to share the Canon Card so that everyone could get a better idea of what it means to be part of this team.

A View From Capella Sochi

In my last post I shared details from the upcoming Capella Georgetown.  But working at our Corporate offices, I can assure you that this is only one of several exciting projects currently under way.  One such property is the upcoming Capella Sochi, which is scheduled to open in time for the 2014 Olympics in Russia.

In between one of his many trips, Fausto Barba, Vice President of Finance & Development, shared with me his impression of this unique location.

“I first visited the site in late October 2009.  We landed at midnight on a Friday, and took a taxicab through the mountains.  We made plans to see the site the next morning at first light.

The hotel is located near some of the sites for Olympic ski events and will be a true ski-in and ski-out resort.  In the summer the resort village will be home to a world-class equestrian center and several outdoor activities.  And  there will be an amazing spa!  Of course, at the time of our visit this was nothing more than a set of plans.

The next morning, when we finally had an opportunity to look out on the site, it took my breath away.  The views in every direction are spectacular.  It is the quintessential mountain village!”

I am awfully excited to introduce the brand new Capella Hotels & Resorts Blog.  Myself, along with team members at each of our properties will share the intimate secrets that make Capella distinct from any other hotel company.

The name Capella refers to a double star in the Auriga constellation.  This double star represents the relationship we look to create between our team and you, our guests.  This blog is another way in which we can foster this connection.

Through well placed insiders at each of our properties and within our corporate office, we will pull back the curtain, giving you a unique perspective on the people, places and things that come together in creating a one of a kind Capella experience.

We will introduce not only our hotels, but also the treasures they hold— from locations rich in history, to the people who make our organization unlike any other.  And perhaps we will share some of our own secrets, cultivated from living and working in these spectacular locations and among their communities.

This is a journey we invite you to take with us.  Interact with us.  Allow us to get to know you as we share our tales.  After all, this is as much your story as it is our own.
