Mexico’s Doughnuts: Churros



When you think of Mexican desserts, what is the first thing that comes to your mind? In my case it’s Churros, sometimes referred to a Spanish donut. Churros are traditional Spanish desserts developed centuries ago by Spanish shepherds. Up high in the mountains, fresh baked goods were impossible to come by, so the indigenous nomadic folk of the hills came up with a delicious cake-like, cylindrical, daily staple which they could easily cook in a pan over an open fire. This was the birth of Churros.

You can have Churros for breakfast, lunch and of course after dinner. That is why I asked Vanessa Johnson, Capella Pedregal’s Pastry Chef, to share with us her secrets for a perfect Churro so we can all try it at home!



1 cup water

1/2 cup butter or margarine

1/4 teaspoon salt

1 cup all-purpose flour

3 eggs, beaten

Vegetable oil, for frying

1/4 cup sugar

1/4 teaspoon ground cinnamon, optional

Chocolate for dunking:

1 tablespoon cornstarch

2 cups milk

4 ounces dark chocolate, chopped

1/4 cup sugar


To make the churro dough: Combine 1 cup of water with the butter or margarine and the salt in a saucepan and bring to a boil over high heat. Using a wooden spoon, stir in flour. Reduce the heat to low and stir vigorously until the mixture forms a ball, about 1 minute. Remove the dough from the heat and, while stirring constantly, gradually beat the eggs into the dough.

To make the chocolate for dunking: In a small bowl, dissolve the cornstarch in 1 cup of milk and reserve. Combine the chocolate with the remaining cup of milk in a saucepan. Stirring constantly, melt the chocolate over medium-low heat. Whisk the sugar and the dissolved cornstarch into the melted chocolate mixture. Reduce the heat to low and cook, whisking constantly, until the chocolate is thickened, about 5 minutes. (Add extra cornstarch if it doesn’t start to thicken after 5 minutes.) Remove the pan from the heat and whisk until smooth then reserve in a warm place.

Heat about 2 inches of oil in a heavy, high-sided pot over medium-high heat until the oil reaches 360 degrees F. Mix the sugar with the cinnamon on a plate and reserve.

Meanwhile, spoon the churro dough into a pastry bag fitted with a large tip. Squeeze a 4- inch strip of dough into the hot oil. Repeat, frying 3 or 4 strips at a time. Fry the churros, turning them once, until golden brown, about 2 minutes per side. Transfer the cooked churros to a plate lined with paper towels to drain.

When the churros are just cool enough to handle, roll them in the cinnamon-sugar (in Spain churros are simply rolled in sugar.)

Pour the chocolate into individual bowls or cups. Serve the warm churros with the chocolate dip.

It’s officially summertime in Cabo, the most popular time of the year for kids of all ages because they are OUT of school for the summer.  Families have already started to arrive in Cabo and the town is ready for them.  Capella Pedregal’s Personal Assistants shared with me their top recommendations for activities for families in Cabo. Of course most people prefer water activities, when the heat goes up what a better way to cool down than with one of the newest trends in adventure sport, Flyboard!  This is a fun activity for the entire family where you will blast out of the water and float above it up to 40 feet in the air.

Another fun activity for the family is “Swimming with the Dolphins” where you have the chance to swim and learn from the beautiful bottlenose dolphins.  For animal lovers, Cabo Adventures has the Trainer for a Day” program, where you can spend the day working closer with the dolphin trainers.


I love adventure activities so I have to recommend trying the outdoor ZipLine Adventure.  It takes place at “Boca de la Sierra” a UNESCO protected biosphere where you can practice climbing, rappelling, walking on suspended bridges and zip lining over the desert on Mexico’s longest and fastest zip line!  With speeds up to 60 mph (100 kph) and a length of over 1,200 meters (more than 4,000 feet), this is an experience you do not want to miss!! 


However, my favorite summer activity is the arrival of the Sea Turtles that come to the Capella beach to lay their eggs.  When it comes time to hatch, guests have the opportunity to help the release the baby turtles into the ocean! The peninsula of Baja California is home to five of the seven species of the world’s sea turtles.  These are the Hawksbill (Tortuga Carey), Loggerhead (Tortuga Caguama, Amarilla o Cabezona), Leatherback (Tortuga Laúd), Green Turtle (also Black Turtle, Tortuga Prieta, Negra o Verde) and most common of all the species of sea turtle, Olive Ridley (Tortuga Golfina).  Turtle releasing is a wonderful, unique experience that will stay in your memory forever!

Es oficialmente verano en Cabo, el momento más popular del año para los niños de todas las edades, ya que están fuera de la escuela durante el verano. Las familias ya han comenzado a llegar a Cabo y la ciudad está preparada para ellos. Por supuesto la mayoría de la gente prefiere las actividades acuáticas, cuando el calor sube qué mejor manera de refrescarse que con una de las nuevas tendencias en el deporte de aventura, Flyboard! Esta es una actividad divertida para toda la familia donde una explosión de agua te hará flotar por encima de ella hasta 40 pies en el aire.

Otra actividad divertida para la familia es el “Nado con los delfines”, donde tienes la oportunidad de nadar y aprender de los hermosos delfines nariz de botella. Para los amantes de los animales, Cabo Aventures tiene el programa de “Entrenador por un Día”, donde puedes pasar el día trabajando estrechamente con los entrenadores de delfines.


Me encantan las actividades de aventura, así que te recomiendo probar el ZipLine outdoor Adventure. Se lleva a cabo en la “Boca de la Sierra”, una biosfera protegida por la UNESCO, donde se puede practicar escalada, rappel, caminar sobre puentes colgantes y tirolesa sobre el desierto en la tirolesa más larga y rápida de México! Con velocidades de hasta 60 mph (100 kph) y una longitud de más de 1.200 metros (más de 4000 pies), esta es una experiencia que no quieres perderte!


Sin embargo, mi actividad favorita es el verano la llegada de las tortugas marinas que llegan a la playa de Capella para poner sus huevos. Cuando llega el momento de salir del cascarón, los huéspedes tienen la oportunidad de ayudar a la liberación de tortugas bebé en el océano! La península de Baja California es el hogar de cinco de las siete especies de tortugas marinas del mundo. Estos son los carey (Tortuga Carey), caguama (Tortuga Caguama, Amarilla o Cabezona), laúd (Tortuga Laúd), la tortuga verde (también Tortuga Negro, Tortuga Prieta, Negra o Verde) y la más común de todas las especies de tortugas marinas, golfina (Tortuga Golfina). La liberación de tortugas es una experiencia maravillosa, única que se quedará en siempre en tu memoria!

Get To Know Auriga Spa Director, Alan Navarrete




All our dreams can come true, if we have the courage to pursue them” – Walt Disney.

And that is exactly what Alan did! Alan was a part of the Auriga spa opening team in 2009 and now the spa welcomes Alan back as the new Spa Director.  As soon as I heard Alan was named the new Auriga Spa Director I couldn’t wait to talk to him about his plans, his goals and what’s to come at the spa.

Alan, welcome back to Auriga spa! Tell us, where did you go after you left the spa in 2010?
Thank you! It’s wonderful to be back. When I was here as the Assistant Spa Director and part of the opening team, I worked closely with Sylvia Sepielli, the visionary behind the Auriga spa concept. After spending time with her, I knew I wanted to be the Spa Director someday. I also knew to achieve this goal I needed to learn more about the world of spa and gain some valuable experience. So I traveled around the world as Spa Director for Canyon Ranch Spa Club on-board Oceania Cruises and Regent Seven Seas. I learned different technics and treatments in many countries in different regions of the world. After three years of traveling and learning, I felt I was ready to come back to my country and pursue my dream at Capella Pedregal.

You literally have seen the world seeking knowledge to follow your dream. I find it interesting you joined the Personal Assistant team while waiting for your dream job. Tell us about this experience.

Yes, it was very important to me to be a part of the Capella team and the Personal Assistant role was a perfect position for me to perfect my customer service skills and build relationships with our guests. The Personal Assistants here are a professional group of individuals and have true passion to service the guest. I feel very fortunate to have had the opportunity to work with them for a year.


It’s like you planned everything perfectly and you were ready when the opportunity presented itself.

Yes, I knew I was ready! As we say in the spa world, the stars were aligned and it must have been the right phase of the moon when my dream finally came true. It is a true honor to be appointed to this very prestigious position.

And now, what are your plans for Auriga?

My plan is to build on the foundation that has already been set which earned the spa the recognition as the “World’s Best Spa”.  The plan for Auriga has always been to transcend into our guest’s lives and incorporate spa and wellness into the overall experience. I will work with the team to incorporate our land and take advantage of our unique location to provide amazing Baja inspired treatments and memorable guest experiences. Great things are to come. Alan, bienvenido de vuelta a Auriga spa! Dinos, ¿a dónde fuiste después que te fuiste del spa en el 2010?

¡Gracias! Es maravilloso estar de vuelta. Cuando estuve aquí como Asistente del Director de y parte del equipo de apertura, trabajé estrechamente con Sylvia Sepielli, la visionaria detrás del concepto del Auriga spa . Después de pasar tiempo con ella, supe que quería ser el Director algún día. También sabía que para alcanzar esta meta tenía que aprender aun más sobre el mundo del spa y ganar valiosa experiencia Así que viajé por el mundo como Directora de Canyon Ranch Spa Club a bordo de Oceania Cruises y Regent Seven Seas. Aprendí diferentes técnicas y tratamientos en muchos países de diferentes regiones del mundo Después de tres años de viajar y aprender, sentí que estaba listo para regresar a mi país y llevar a cabo mi sueño en Capella Pedregal.

Literalmente ha visto el mundo en busca de conocimiento para seguir tu sueño. Me parece interesante que te uniste al equipo de los Asistentes Personales mientras esperabas tu trabajo soñado. Cuéntanos acerca de esta experiencia.

Sí, fue muy importante para mí ser parte del equipo de Capella y el papel Asistente Personal era una posición perfecta para mí para perfeccionar mi habilidades de servicio al cliente y construir relaciones con nuestros clientes Los asistentes personales aquí son un grupo de personas profesionales y tienen una verdadera pasión por el servicio a los huéspedes. Me siento muy afortunado de haber tenido la oportunidad de trabajar con ellos durante un año.


 Es como si hubieras planeado todo a la perfección y que estabas listo cuando se presentó la oportunidad.

Sí, sabía que estaba listo! Como decimos en el mundo de los spas, las estrellas estaban alineadas y debe haber sido la fase correcta de la luna cuando mi sueño se hizo realidad Es un verdadero honor haber sido nombrado para este puesto de gran prestigio.

Y ahora, ¿cuáles son tus planes para Auriga?

Mi plan es construir sobre la base que ya se ha establecido y por la que obtuvo el spa el reconocimiento como el “Mejor Spa del Mundo ” El plan para Auriga siempre ha sido trascender en la vida de nuestros huéspedes e incorporar spa y bienestar a la experiencia general. Voy a trabajar con el equipo para incorporar nuestra tierra y tomar ventaja de nuestra ubicación privilegiada para proporcionar tratamientos inspirados en la asombrosa Baja y experiencias memorables para los huéspedes. Cocktail Secrets From Capella Pedregal’s Osvaldo Vazquez



I recently spent some time with Capella Pedregal’s Mixologist, Osvaldo Vazquez, so I could discover the cocktail secrets behind his deliciously crafted drinks as well as to get more of an inside scoop on the upcoming A Taste Of Capella, Food & Wine Festival next month.

Osvaldo has gained national and international recognition as a premier mixologist and is known as a pioneer in Cabo San Lucas for his “cutting edge” cocktails using homemade and seasonal ingredients.  His barrel-aged cocktails and his “house made bitters” are not to be missed.

CI – Hi Osvaldo!  I am becoming your #1 fan! There is not one cocktail you’ve made that I have not enjoyed!  Please, tell us the secret behind your signature cocktails.

O – Thank you! For all our cocktails, we use local and organic ingredients and first class beverages, but what makes the difference is that the cocktails are truly hand crafted. The team and I spend many hours creating bitters, infusing tequila, mezcal and bourbon with unique ingredients that will later be aged in our barrels.


CI – WOW! Tell me more about the Capella bitters!

O-Well, first you have to understand what a bitter is. A bitter is like vinegar the chef uses to add a little flavor to his food. The flavor of a homemade bitter is unique and gives that special touch to our cocktails.  During the last year and a half, we have created over 15 different flavors of bitters, such as chocolate, lavender, lemon and orange.

To make the bitters, we work with a distillery in Todos Santos that provides us with 100º proof corn spirits.  We select the “ingredients” to infuse with the spirits, such as cherry wood, orange pill, tree bark, etc.  Then we start with our filtering processes and the results are phenomenal.

CI – Tell us, what should we expect regarding cocktails at the upcoming A Taste Of Capella, Food and Wine Festival?

O – This year, we will focus much more on cocktails and thanks to the participation of Ulysses Vidal of Employees Only in New York City , we will have a new class called the Crafted Cocktail.  In his demonstration he will hand create crafted spirits influenced by the 1920s and 1930s.  Throughout the festival our guests will enjoy crafted beers, tequila from our barrels and of course, some special signature cocktails specially created for the festival.
