Summer is my favorite season of the year. During the summer months, my hair gets lighter, my skin gets darker, the water in the Pacific Ocean gets warmer and life in Cabo gets better.  This summer, I spent most of my time in the sun, between enjoying Don Manuel’s pool and trying some of the summer activities the Capella Pedregal Personal Assistants recommended.  But last weekend was, even for me, too much time in the sun.  I got an awful sunburn and my skin was hurting.  Luckily, Alan Navarrete, Auriga Spa Director, recommended I try the Sun Worshiper treatment at the spa that was specially designed for moments like this.

Normally, any Auriga spa experience starts with relaxation time in the wet areas followed by a foot ritual before going into the treatment room. Since my skin was so delicate, Betty, the therapist, encouraged me to only spend time in the ice room and not the steam room, which was a great recommendation.  From there she started with my foot ritual (using cold water) and I immediately felt better.

The Sun Worshiper treatment started with cold towels on my feet and back that helped to release the tension and the burning.  Next was the hydrating full body mask to nourish my skin and activate the natural collagen in my body.  The mask included mineral-rich organic algae, luscious aloe vera, aloe vera gel (harvested from plants in Capella Pedregal’s own desert grounds) and green tea extracts, rich in antioxidants.

Once my body was completely relaxed, the masseuse Betty gave me a mini facial with Osea’s product, Ocean Lotion, a sun repair and hydrating oil. All Osea natural products specialize in vegan skin care from the sea and are used on the rest of the body. To my surprise, the facial also included a cranial massage. By this time my mind was relaxed and my skin was feeling so much better. I have to say, because of my damaged skin, a typical massage would have hurt too much, but the softness and delicacy of this treatment was just what I needed!
Now you know, next time you spend too much time in the sun at Capella Pedregal’s pools, experience the Sun Worshiper treatment at Auriga spa, trust me, you will feel much better.

Capella Pedregal 5th Anniversary

rsz_img_7145

“Time flies when you are having fun!” It certainly does! I can’t believe it’s been five years since the opening of Capella Pedregal back in July of 2009. So many wonderful things have happened. In only five years the team has achieved some of the greatest honors in the industry. Travel & Leisure Readers’ Choice World’s Best Awards named Auriga spa #1 Spa in the World in 2012 and in 2014 voted Capella Pedregal #1 Hotel in Mexico and #15 in the World! Let’s not forget the coveted AAA Five-Diamond Award for the last three years.

But for the Capella Team, the most important thing is the relationship with the guests.  Our guests have become friends and now think of Capella Pedregal as their Mexican home. The pre-opening team was a group of only 54 people and now the Capella Family has grown to 450 people! 450 people working with the only goal of creating memorial experiences for their guests.

As I shared with you in previous blogs, from July 9-13 Capella Pedregal hosted the 3rd Annual A Taste of Capella, Food and Wine Festival. The culinary festivities gather a group of some of the best chefs and recognized mixologists along with great Tequila and wine makers that flew from different parts of the world to share their talent and knowledge.  During the festival, the chefs shared time with the guests, both at the dinner events and in cooking demonstrations and even a private sunset cruise that took them to see the beautiful Land’s End Arch of Cabo San Lucas. Every day was a celebration and a wonderful display of the best wines, food and cocktails but the final night, the Gala Dinner, was something I will never forget.  It wasn’t only the closing night of the festival, but was the celebration of Capella Pedregal’s 5th anniversary.

rsz_img_7145

The celebration took place at Don Manuel´s restaurant and started with a reception where we toasted with Taittinger’s finest champagne, Blanc de Blanc 2012, Comptes de champagne, a special reserve specially opened in honor of the big anniversary!  Later, the guest chefs and Chef Yvan Mucharraz prepared a spectacular five course dinner perfectly paired with delicious wine.  At the end of the evening Capella Pedregal’s General Manager, John Volponi, thanked the team and the guests for being part of this milestone.  The big surprise was that right after his speech, a beautiful display of fireworks illuminated the sky and as the Mariachi music started, each guest was received a sparkler.  Then the real party started and everyone was dancing.  It was a wonderfully memorable evening!

Happy Birthday Capella Pedregal!

Mexico’s Doughnuts: Churros

churros

rsz_07082014-img_3569

When you think of Mexican desserts, what is the first thing that comes to your mind? In my case it’s Churros, sometimes referred to a Spanish donut. Churros are traditional Spanish desserts developed centuries ago by Spanish shepherds. Up high in the mountains, fresh baked goods were impossible to come by, so the indigenous nomadic folk of the hills came up with a delicious cake-like, cylindrical, daily staple which they could easily cook in a pan over an open fire. This was the birth of Churros.

You can have Churros for breakfast, lunch and of course after dinner. That is why I asked Vanessa Johnson, Capella Pedregal’s Pastry Chef, to share with us her secrets for a perfect Churro so we can all try it at home!

rsz_churros-2

Churros

1 cup water

1/2 cup butter or margarine

1/4 teaspoon salt

1 cup all-purpose flour

3 eggs, beaten

Vegetable oil, for frying

1/4 cup sugar

1/4 teaspoon ground cinnamon, optional

Chocolate for dunking:

1 tablespoon cornstarch

2 cups milk

4 ounces dark chocolate, chopped

1/4 cup sugar

Directions

To make the churro dough: Combine 1 cup of water with the butter or margarine and the salt in a saucepan and bring to a boil over high heat. Using a wooden spoon, stir in flour. Reduce the heat to low and stir vigorously until the mixture forms a ball, about 1 minute. Remove the dough from the heat and, while stirring constantly, gradually beat the eggs into the dough.

To make the chocolate for dunking: In a small bowl, dissolve the cornstarch in 1 cup of milk and reserve. Combine the chocolate with the remaining cup of milk in a saucepan. Stirring constantly, melt the chocolate over medium-low heat. Whisk the sugar and the dissolved cornstarch into the melted chocolate mixture. Reduce the heat to low and cook, whisking constantly, until the chocolate is thickened, about 5 minutes. (Add extra cornstarch if it doesn’t start to thicken after 5 minutes.) Remove the pan from the heat and whisk until smooth then reserve in a warm place.

Heat about 2 inches of oil in a heavy, high-sided pot over medium-high heat until the oil reaches 360 degrees F. Mix the sugar with the cinnamon on a plate and reserve.

Meanwhile, spoon the churro dough into a pastry bag fitted with a large tip. Squeeze a 4- inch strip of dough into the hot oil. Repeat, frying 3 or 4 strips at a time. Fry the churros, turning them once, until golden brown, about 2 minutes per side. Transfer the cooked churros to a plate lined with paper towels to drain.

When the churros are just cool enough to handle, roll them in the cinnamon-sugar (in Spain churros are simply rolled in sugar.)

Pour the chocolate into individual bowls or cups. Serve the warm churros with the chocolate dip.

You can always enjoy them at Don Manuel’s restaurant, El Farallón or in the privacy of your suite. Buen Provecho!

Top Activities For Families In Cabo

Turtle release in Los Cabos, Mexico

It’s officially summertime in Cabo, the most popular time of the year for kids of all ages because they are OUT of school for the summer.  Families have already started to arrive in Cabo and the town is ready for them.  Capella Pedregal’s Personal Assistants shared with me their top recommendations for activities for families in Cabo. The choices are endless and there is something for everyone.

rsz_flyboard

Of course most people prefer water activities, when the heat goes up what a better way to cool down than with one of the newest trends in adventure sport, Flyboard!  This is a fun activity for the entire family where you will blast out of the water and float above it up to 40 feet in the air.

Another fun activity for the family is “Swimming with the Dolphins” where you have the chance to swim and learn from the beautiful bottlenose dolphins.  For animal lovers, Cabo Adventures has the Trainer for a Day” program, where you can spend the day working closer with the dolphin trainers.

rsz_underwater_ride

I love adventure activities so I have to recommend trying the outdoor ZipLine Adventure.  It takes place at “Boca de la Sierra” a UNESCO protected biosphere where you can practice climbing, rappelling, walking on suspended bridges and zip lining over the desert on Mexico’s longest and fastest zip line!  With speeds up to 60 mph (100 kph) and a length of over 1,200 meters (more than 4,000 feet), this is an experience you do not want to miss!!

However, my favorite summer activity is the arrival of the Sea Turtles that come to the Capella beach to lay their eggs.  When it comes time to hatch, guests have the opportunity to help the release the baby turtles into the ocean! The peninsula of Baja California is home to five of the seven species of the world’s sea turtles.  These are the Hawksbill (Tortuga Carey), Loggerhead (Tortuga Caguama, Amarilla o Cabezona), Leatherback (Tortuga Laúd), Green Turtle (also Black Turtle, Tortuga Prieta, Negra o Verde) and most common of all the species of sea turtle, Olive Ridley (Tortuga Golfina).  Turtle releasing is a wonderful, unique experience that will stay in your memory forever!
